Fresh Meals for our Students
What goes into feeding nearly 1,400 students every day? More heart than you might imagine. Hello Pinnacle Pack! Check out how our kitchen staff carefully prepares pozole for our students. Each dish is prepared with intention, and they do it with the same care they would for their own families. For instance, our pozole is made with fresh ingredients and prepared a full day in advance! Mayra, our Kitchen Lead, puts it best: "I believe the secret to a good pozole is fresh meat and slow cooking to blend all the flavors; we use high-quality ingredients so that our pozole tastes just like home. In the kitchen, we prioritize quality; everything we make, we make as if it were for our own families." From hand-cleaning chiles one by one to making sure every flavor comes together just right, the behind-the-scenes work takes a huge chunk of time and allows them to serve up to 950 students a day in the K-8 building alone.
